Laudella est un fromage typiquement artisanal, moelleux et léger, issu de la transformation de lait de vache entier. Un fromage de table, affiné 4 mois au moins.
Sa pâte moelleuse, de couleur blanche ou légèrement paillée, présente de nombreux petits trous. Il offre une saveur douce mais nette et marquée, jamais piquante. Sa croûte jaune paille est lisse, régulière, sèche et propre. On le consomme généralement crû en fin de repas ou en hors-d’œuvre mais il se déguste également frit ou grillé, accompagné de polenta de maïs.
